Carob powder, is a cocoa powder alternative.

It’s made from dried, roasted carob tree pods and looks a lot like cocoa powder. Carob powder is often used as a natural sweetener in baked goods. It’s sweet and has a unique taste.

Carob tastes similar to chocolate and is a great alternative because it has:

  • a lot of fiber
  • antioxidants
  • low amounts of fat and sugar
  • no caffeine
  • no gluten

Ingredients:

  • 2 cups Gluten free flour or All purpose flour
  • 2/3 cup It-Tokk Gozo Traditional Food carob powder
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2/3 cup coconut sugar or 1/2 cup white sugar
  • 1 tablespoon cinnamon
  • 1/2 cup oil (any is fine)
  • 1 1/4 cup water

Method:

  1. Mix all the dry ingredients together.
  2. Whisk them together to ensure you have a uniform texture.
  3. Add all the liquid ingredients.
  4. Whisk them to ensure there are no clumps.
  5. Put in muffin caps and place them in muffin tins. Bake at 180 C for about 20-25mins.
  6. Before serving, you have the option to dust the muffins with powdered sugar.
