Carob powder, is a cocoa powder alternative.
It’s made from dried, roasted carob tree pods and looks a lot like cocoa powder. Carob powder is often used as a natural sweetener in baked goods. It’s sweet and has a unique taste.
Carob tastes similar to chocolate and is a great alternative because it has:
- a lot of fiber
- antioxidants
- low amounts of fat and sugar
- no caffeine
- no gluten
Ingredients:
- 2 cups Gluten free flour or All purpose flour
- 2/3 cup It-Tokk Gozo Traditional Food carob powder
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2/3 cup coconut sugar or 1/2 cup white sugar
- 1 tablespoon cinnamon
- 1/2 cup oil (any is fine)
- 1 1/4 cup water
Method:
- Mix all the dry ingredients together.
- Whisk them together to ensure you have a uniform texture.
- Add all the liquid ingredients.
- Whisk them to ensure there are no clumps.
- Put in muffin caps and place them in muffin tins. Bake at 180 C for about 20-25mins.
- Before serving, you have the option to dust the muffins with powdered sugar.
You can also use the same recipe if you like to bake a cake.
